LATIN Food 2018 : book of proceedings

Abstract

This e-book of proceedings contains the in extenso works authored by those attendees to the event who were willing to prepare a manuscript derived from their oral or poster presentations and is composed by one volume, divided in five sections, corresponding to the scientific areas of Latin Food 2018 and aims at covering the main subjects of the Food Science and Technology discipline and represents the level and coverage of the discipline in our country and beyond.
